On at least one occasion Pepys refers to this as "Wilkinson's", after its proprietor, William Wilkinson.

Cookshop on w. side, between Sea Alley and Axe Yard; kept by William Wilkinson since at least 1637. Pepys mentions his death in 1668; his widow Alice, who died shortly afterwards, ordered the house to be sold. 14 hearths, 1664
